Sautéed Lamb loin with pan roasted shallots and fresh herbs,
plated with a port demi-glaze.

Chicken Lemonaise
Boneless chicken sautéed with mushrooms and broccoli in a light lemon wine sauce.

Cathedral Chicken
Boneless breast of chicken slow roasted and basted with pesto,
served with a creamy garlic sauce

Haddock Scampi
Haddock broiled with Lemon, Leeks and Shrimp,
served with Scampi sauce over pasta.

Salmon
Farm raised Salmon charbroiled and served with a mustard cream sauce.

Seafood Newburg
Haddock, Baby Shrimp and scallops are simmered in a sherried Lobster sauce accented with scallions and served over pastry pillows.
